MEET REECE RICHARDS
For Reece Richards, brewing is equal parts science and art. “It’s like being an artist,” he explains. “You paint something from your head, and people enjoy looking at it. With beer, they get to enjoy looking at it and drinking it.”
Reece began as a dedicated homebrewer before breaking into the professional scene six years ago - no easy feat in an industry that’s tough to crack. After volunteering at breweries, he formalised his studies through London University’s Institute of Brewing & Distilling, then rose quickly to head brewer at Four Hearts. From there, he stacked up national awards, honed his technical mastery, and helped Carbon Six Brewing claim Best New Brewery at the Royal Queensland Beer Awards. These days, he’s known for designing recipes that balance creativity with precision.

THE MIND BEHIND GC LAGER
When Official Beer Co approached Reece with a challenge — to brew a crisp, low-carb lager that “everyone would enjoy” — he had the recipe in his head from day one. Inspired by the clean drinkability of Mexican cervezas, he built GC Lager around Motueka hops, which deliver a subtle lime-zest lift.
But achieving that low-carb profile took more than intuition. As Reece explains, most beers leave behind residual sugars after fermentation. With GC Lager, he added a special enzyme during brewing that breaks down longer-chain sugars, leaving nothing for the yeast to miss. The result? A beer that ferments all the way through to “bone dry,” with no residual sugar - crisp, refreshing, and lighter without sacrificing flavour.
“Lagers are the hardest beers to hide flaws in,” Reece says. “If there’s even a small mistake, it shows. But with GC Lager, I can confidently say it’s one of the best lagers I’ve ever brewed - especially in the low-carb space.”
For Reece, that’s the reward of brewing: taking a recipe that once lived only in his head, putting in the hours (and endless cleaning), and seeing people genuinely love the final beer. Or, as he puts it: “I wanted something people could enjoy anywhere - at a party, at the beach, even mowing the lawn with a cold one in hand. And I think we nailed it.”
